I love spices and flavors of all sorts, but my husband is more of a salt and pepper guy. My work around is that I can get away with adding spice to a meat if I can make that meat so tender that it melts in the mouth. After a ton of experimenting I found the best way to do this was to not only add some liquid, either your sauce or just plan water/chicken stock and cover for 3/4 of your cooking time, but to make sure the meat was well tenderized.
In the past I typically would tenderize my meat using a fork or regular old knife, but ran into a few issues. The fork doesn't always go deep enough in larger/thicker slabs of meat. It also doesn't go through meat that may have a little defrosting to go all that well making it hard to successfully use a marinade. The knife brings with it the obvious potential for injury issue as your stabbing at something instead of slicing something. Your slices will be larger which can affect the external presentation of the wood since you will be slicing it creating a new shape instead of creating the little wholes. Plus, the larger slices just allow for fluid loss and tend to create dryer sections of the meat.
Finding a better way to tenderize was awesome.
